Current filters are limited to a "Contains" option.
"Show all orders that are (something)"
This is fantastic if you only want to see orders that match one particular variable. But there's no option to exclude a particular variable.
"Show all orders that aren't (something)"
In development and will be part of Pressero V7 coming in 2022.
